You guys! My kitchen smells like the state fair right now. Did you ever go to the state or county fair as a kid? Oh the nostalgia. The giant ferris wheel. Cute farm animals. Face painting. And alllllll the fried food you could eat! I generally ate healthy growing up (thanks mom!) but going to the fair every summer was the exception to that. Seriously. All. The. Fried. Food. Funnel cake, fried oreos, fried cheese, and apple fritters!

Now that I’m all grown up and prioritize health over my love of deep fried treats, it’s been years since I’ve had anything that even resembles a fritter. Until today, that is. Today I have discovered the best AIP chicken recipe since… possibly ever? These AIP BBQ Chicken Fritters are crispy, flavorful, and yes– they smell like the state fair. They have all the taste and crunch of deep fried goodness without actually being deep fried! Best day ever right?

If you miss fried food or BBQ on AIP, you need these AIP BBQ Chicken Fritters in your life! Not only are they unbelievably delicious, but they’re also incredibly easy to make. This easy AIP chicken recipe is only 3 ingredients and takes just 10 minutes to make. They freeze beautifully and work well for an appetizer, lunch, dinner, snack, or even breakfast! You’ll make this delicious AIP chicken recipe again and again.

Here are the only ingredients you’ll need for these AIP BBQ Chicken Fritters:

That’s it! Plus salt and oil, of course. For the shredded chicken, I usually just take the chicken breast off of a whole rotisserie chicken. It’s more cost-effective that way because you can eat the rest of the bird later and use the bones for soup! You can also use leftover chicken for these fritters. When you mix the shredded chicken with the AIP BBQ sauce, it tastes just like pulled BBQ chicken!

There are several options for AIP BBQ sauce you can use with this recipe. KC Naturals makes excellent elimination phase compliant AIP BBQ sauces that are simply delicious. They have two flavors: Mastadon (has a bit of a kick to it with horseradish) and Primal Cherry (has a sweeter and fruitier flavor). Both sauces work well for this AIP chicken breast recipe. Once you have your pulled chicken and your AIP BBQ sauce, you just mix the two together, add a little salt, dip in tapioca flour, throw it into your frying pan, and voila! Hot and crispy AIP BBQ Chicken Fritters in less than 10 minutes flat! See? I wasn’t kidding when I told you this was an easy AIP chicken recipe. It takes almost no time or effort at all!

I prefer using tapioca flour for this AIP chicken breast recipe because it provides a crunchier coating and it has a bit of chewiness to it that makes the fritter feel cheesy (which I love because cheese is my favorite thing ever). However, you can also use arrowroot flour and it will still taste delicious! Serve these AIP BBQ Chicken Fritters hot out of the pan with extra sauce for dipping.

The other cool thing about this AIP chicken recipe is that it’s extremely versatile. You can use the same basic recipe with virtually any AIP compliant sauce. If you’re following Paleo or Whole30 and can tolerate nightshades, you can just use a regular compliant BBQ sauce like this one here. You can also try this chicken fritter recipe with Paleo or Whole30 buffalo sauce, tomato sauce, terriyaki sauce, sriracha, or anything else you can think of! I also love using The New Primal Citrus and Herb sauce which tastes great with chicken. It’s both Paleo and Whole30 approved. You can also dip your Paleo or Whole30 fritters in ranch dressing or mayonnaise for some creaminess. SO GOOD!   1. Combine shredded chicken breast, AIP BBQ sauce, and salt in a bowl.

  2. Add flour to a large plate and spread into an even layer.

  3. Add oil to a large pan and heat over medium-high heat until shimmering.

  4. Using about 2 tablespoons of the chicken breast mixture, form a ball and then flatten into a circular patty with your hands.

  5. Dip both sides of the chicken patty into the flour. Place on a clean plate.

  6. Repeat with remaining chicken breast muxture. You should end up with 8 fritters.

  7. Carefully place each fritter into the oil making sure they don't touch.

  8. Cook 2 minutes on each side. Remove hot fritters onto a paper towel lined plate and allow the excess oil to absorb.

  9. Serve hot with extra sauce on the side for dipping. Enjoy!

I usually shred the chicken breast off of a whole rotisserie chicken for this recipe. You can also use leftover chicken breast or pulled chicken.

I like using coconut oil for this recipe because it gives the chicken fritters a slight "coconut-y" taste. If you'd prefer a more neutral taste, you can use olive oil or avocado oil instead. You can also try using lard.

If you are paleo or Whole30 and can tolerate nightshades, feel free to use any compliant BBQ sauce you want! My favorites are this oneor this other one here.

You can use this same basic chicken fritter recipe with other sauces to create different flavors. Some of my favorites of Paleo and Whole30 are compliant buffalo sauce, terriyaki sauce, sriracha, or tomato sauce. For AIP you can try, no tomato sauce or this tasty AIP terriyaki sauce!

Double the recipe and freeze the leftovers! Makes a great easy AIP snack or meal on busy weekdays. You can re-heat the chicken fritters in a pan with a little oil, the oven, or the microwave.
